In the heart of Ogliastra, one of the most outstanding areas of Sardinia, our little hotel, The Orlando. We’re open all year round and have 30 rooms, a panoramic pool, two restaurants, a fully equipped conference center, a new luxury SPA and Beauty Farm and many outdoor spaces where enjoying the magical atmosphere of the Sardinian inland represents a real pleasure. Food is a big part of our culture here in Italy and we are famous for our pasta and cheese, both of which are king in our culinary tradition. Below are a list of locally produced cheeses and pasta which are literally to live for. Cheeses “Casu axedu”  is a fresh soft cheese like a natural compact yogurt. The “Fixiu” is a salted compact cheese commonly used to prepare a lot of typical Ogliastra’s dishes, such as the “Gathulis” or the vegetables soup. The “pecorino” Is a dry, strong and extremely tasty cheese. Specialty Pastas Made by the local women in the village. The “Marracones e Palineddu”, a typical homemade pasta that can be dressed with tomatoes sauce or with goat meat sauce. The “Culurgiones” a typical homemade pasta filled with potatoes, cheese, olive oil and dressed with tomatoes sauce and basil. Delicious to are the “pappardelle ai funghi porcini”, a special kind of long pasta with cep mushrooms and the ravioli filled with truffle and dressed with pecorino cheese. Other Specialty Foods The Gathulis, small fried rings made with potatoes, flour, and fixu cheese. The “seadas de patata e casu friscu”, baked home pasta filled with potatoes and fresh cheese. “Sa turredda e curcuriga”, a typical Ogliastra’s Starter with pumpkin. The flan of thready pecorino cheese and sweet cannonau wine.
